Paris Baguette To Open First Buffalo-Area Café In Williamsville

Paris Baguette, the international bakery café chain, is set to open a new location at 5150 Main St., No. 200, in Williamsville on Aug. 31, marking the company’s first café in the Buffalo area and its second in upstate New York.

The café will be operated by franchisees Ivan Shen and Jing Zhang, cousins who grew up in New York City and frequented Paris Baguette locations there before noticing the brand’s absence during visits to family in the Buffalo region. The new location will offer the chain’s standard lineup of artisan pastries, cakes, breads and handcrafted coffee and tea drinks.

According to the company, Paris Baguette currently operates more than 4,000 locations worldwide and has surpassed 300 bakery cafés across North America, with additional sites in development. The company has stated a goal of reaching 1,000 locations across the United States and Canada by 2030, a target it says it plans to meet largely through partnerships with local franchise operators.

Shen described the decision to bring the brand to Williamsville as a personal one, tied to memories of the chain’s role in his and Zhang’s daily lives in New York City. He said the pair wanted to recreate that sense of familiarity for their family and the broader Buffalo community, framing the new café as a space where neighbors can gather over baked goods and coffee. Darren Tipton, chief executive officer of Paris Baguette, said the company’s broader strategy centers on reestablishing neighborhood bakery cafés as community gathering points, and pointed to the Williamsville opening as an example of that approach playing out locally.

The opening comes amid continued growth in the U.S. bakery café segment, where chains blending grab-and-go pastries, made-to-order cakes and espresso-style beverages have expanded steadily in suburban and mixed-use retail corridors. Consumers in many mid-sized metro areas have shown sustained demand for fresh-baked goods paired with sit-down café seating, a format that has helped brands originally built in dense urban markets translate their appeal to smaller regional centers.

Franchise-driven expansion has become a common growth model for bakery and quick-service concepts seeking to scale quickly without directly financing every new location. By relying on local operators who often have personal or family ties to a region, chains can tailor customer experience to community expectations while maintaining consistent branding and menu offerings across markets. Industry analysts have noted that this approach can accelerate market entry into secondary cities, where name recognition built in larger metros can create early customer interest even before a location opens.

The Williamsville café will be located in a retail space on Main Street, a corridor that has seen a mix of dining and retail development in recent years. Paris Baguette has not announced additional Buffalo-area locations at this time, though the company has indicated further expansion in the broader upstate New York market is part of its long-term plans.
